Elderflowers, the blossoms of the wonderful native elderberry shrub, Sambucus canadensis, are a traditional delicacy in very early summer before Solstice.
They are made into Elderberry syrup or cordial (called saft in Swedish) with the most delicate floral flavor! Or can be steeped fresh in tea, or dried for medicinal use throughout the year. You can also infuse them in honey or vinegar. Elderberry is immune-system fortifying.
