Delicious, beautiful, graceful, healthful garlic scapes (flower stalks and buds) for making pesto and other early summer delights, only available during the month of June each year!

$4/quarter-pound bunch (amount for making 1 batch of pesto, shown in second photograph)

Scapes are the elegant, slender curlicue flower buds of hardneck garlic plants, picked
in June before they open into flowers. It’s best not to let them flower and make seeds
which takes some of the plant's energy away from producing the bulbs under the soil
— plus they’re a tasty bonus part of garlic to enjoy weeks before garlic bulbs are ready!
Store scapes in a plastic bag in the veg drawer and they will keep for weeks.

Use scapes in any way that you would garlic, roughly chopped— no need to
mince as they have a sweeter, milder flavor than garlic cloves:


-saute or stir fry with vegetables
-roast with meat, fish or vegetables
-lightly batter and fry
-grill (watch carefully they cook quick and burn very easily!)
-top pizza with scapes sautéed in olive oil
-chop raw scapes finely or blend into salad dressings
-puree into pesto— recipe for 1/4 lb. bunch of scapes ($4) provided with any order of scapes:)
-garlic scape & white bean dip is also delicious— recipe online.

-chop and freeze on cookie sheets and store in freezer bags, or puree with olive oil and freeze, for convenient use all year long!
