Super nutritious and delicious Jerusalem Artichokes can be eaten raw in salads and slaws as well as roasted, boiled and added to soups and stews.

November into early December is the only time of year that sunchokes can be dug up, once they have matured and turned sweet and before the ground freezes. We have had JA growing here on the farm for at least a century!
Amazing fact about them: they are the ONLY cultivated (and growing wild) food we still eat that was native to North America at the time of European colonization.
Also, sunchokes do not contain starch like potatoes and other root vegetables, they contain the predigestive fiber Inulin, which makes them a healthy food for diabetics and anyone as they are not broken down into sugar. However this also means they can only be consumed in moderation as they can cause gas and bloating when large quantities are eaten all at once.
