We let wild dandelions grow with abandon alongside the perennial asparagus plants in their fertile bed that we add Certified-Organic Coast of Maine compost to every year. They're lush with young, tender dark green leaves in springtime. This naturally bitter tonic herb is super nutritious, aiding the liver in cleansing. Dandelion greens can be eaten raw in salads, blended in smoothies or juiced, and lightly steamed or braised and added to a stir fry or over pasta.
This is a clean, organically grown source of dandelions from in mineral-rich soil, rather than those foraged from a roadside, or a lawn that may have been managed with toxic herbicides, pesticides, fungicides and fertilizers at some point.
